The Sunday before Christmas the Fagans and the Zockolls made their own version of a Cafe Rio salad. It wasn't exactly the same...but it was still DANG good!!! We had the pork (which cooked in the crock pot for like 18 hours), the dressing (which had a bit more of a kick than Cafe Rio's), tortillas covered with cheese for the bottom, rice, beans, guacamole, tortilla strips...everything! It was gooooooood!

We should have taken a picture before we devoured every last bite...but it was just TOO good!During dinner, Tiffany got a phone call asking if it was ok if Santa stopped by that evening (can you guess who?). Jack wasn't too impressed with Santa, but he LOVED the candy cane, and at least he didn't cry!
